  • Russet potatoes, thinly sliced

  • 2 tbsp cornstarch

  • 1/2 cup fresh Parmesan, grated

  • 1 tbsp fresh Parsley, chopped

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1-2 tbsp olive oil or avocado oil spray

Instructions πŸ§‘β€πŸ³:
  • Wash and peel Russet potatoes. Slice into thin rounds using the mandoline slicer in my kitchen finds. Soak in cold water for 20 minutes to remove excess starch, then drain and pat thoroughly.

  • In a large bowl, toss potato slices with oil, cornstarch, salt, pepper, onion powder, garlic powder, and paprika until evenly coated.

  • Arrange slices in a single layer in the air fryer basket (work in batches if needed). Cook at 375℉(190℃) for 12-15 minutes, flipping halfway through, until golden crispy.

  • Sprinkle with fresh Parmesan and parsley while hot.

  • Serve immediately with ketchup, ranch, or garlic aioli.
