Vegan Tofu Taquitos

Ingredients 🛒:
For the Charred Tomato Salsa (makes extra for dripping):
  • 5-6 large tomatoes

  • 1 red onion

  • Small bunch of parsley

  • 2 garlic cloves

  • 1 green chili (or half if you prefer less spice)

  • Salt, to taste

  • 1/2 red pepper (optional, for more flavor)

For the Taquitos:
  • 10 mini corn tortillas

  • 1 block extra-firm tofu, grated

  • 1 small red pepper, finely chopped

  • 1 tub vegan cream cheese

  • 1/2 cup of the charred tomato salsa

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1/2 tsp oregano

  • 1/2 tsp garlic

  • Pinch of salt

  • Flour+water paste (to seal wraps)

  • Spray oil (for air frying)

Instructions 🧑‍🍳:
  • Heat a dry pan or grill pan over medium-high heat.

  • Add the tomatoes, red onion, garlic, chili, and red pepper (if using).

  • Char them for 5-7 minutes until the skins blister and blacken slightly.

  • Let them cool slightly, then blend or pulse with parsley and add salt to taste.

  • Set aside the tomato salsa - it should be smoky, chunky, and flavorful.

  • To make the filling, mix grated tofu, chopped red pepper, vegan cream cheese, 1/2 cup salsa, and all the spices in the bowl. Stir until evenly combined and creamy.

  • To assemble the tortillas, warm them so they're pliable. Place 1-2 tablespoons of filling in each tortilla and roll tightly, and use the flour-water paste to seal the edges.

  • Lightly spray the taquitos with oil and arrange them in the air fryer basket without overlapping.

  • Air fry at 190℃(375℉) for 8-10 minutes, turning halfway, until golden and crispy, and serve hot.

Ingredient Modifications & Substitutions:
  • Use flour tortillas if corn tortillas are not available.

  • Swap vegan cream cheese for hummus or mashed avocado.

  • Add sweet corn, black beans, or spinach for a heartier filling.

  • Bake at 200℃(400℉) for 15-20 minutes if you don't have an air fryer.

  • Spice it up with chili flakes or hot sauce.
